It's that time of year when Spring has sprung! But on gray days like today in Wisconsin, where we are currently under a winter storm warning; even though yesterday was 58 degrees; it makes us wish for those warm summer patio days sipping on a classy cocktail. They are right around the corner my lovelies and with Easter this Sunday, it is just one of many holidays that is perfect for hosting and planning a brunch. And when we think brunch, of course half of it we think of those oh soooo delic brunch cocktails. So, I curated a list of my top favorite classy brunch cocktails you can serve up to your family and best of friends. Have a Happy Easter! Bottoms Up!

PRETTY PALOMA COCKTAIL
½ cup silver tequila
¼ cup grapefruit juice
2 tbl fresh lime juice
club soda
lime wedges for garnish

POMEGRANATE CHAMPAGNE COCKTAIL
ounce chilled pomegranate juice (2 tablespoons)
1 ounce chilled fresh orange juice (2 tablespoons)
3 ounces chilled champagne (6 tablespoons)
1 teaspoon pomegranate seeds
(Serves 2 )
CLEMENTINE & ROSEMARY MIMOSA
Rosemary Syrup
– ½ cup fresh rosemary leaves, roughly chopped
– 2 cups granulated sugar
– 2 cups water
– Rind from 3 clementines, cut into thin strips & pith REMOVED
Clementine & Rosemary Mimosa
– 1 oz clementine juice
– ½ oz lime juice
– ½ oz rosemary syrup
– 3 oz prosecco or champagne

PEACH BELLINI
Original Version:
2/3 cup white peach puree (use yellow peaches if white not available)
1 teaspoon raspberry puree
1 bottle chilled Italian sparkling wine such as Prosecco orAsti Spumante Brut
Quick version:
1 parts Peach Schnapps
3 parts Champagne (or Sparkling wine)
Combine in champagne flutes, serve.

CLASSIC BLOODY MARY
2 oz Premium Vodka
4 oz Tomato juice
2 dashes Tabasco Sauce
2 tsp Prepared horseradish
2 dashes Worcestershire sauce
1 pinch Celery salt
1 pinch Ground black pepper
1 pinch Smoked paprika
Garnish with lemon, lime, olives, mushrooms, pickle and whatever else your heart desires. If you are looking for pre-made mix, Zing Zang Bloody Mary Mix is a fav of mine! Ummm, yuuuum!

CHAMPAGNE PUNCH BELLINI
1 bottle champagne, sparkling wine, or prosecco
1/2 cup raspberry sorbet (or your favorite flavor sorbet)
Fresh raspberries (or your favorite fruit)

PEAR & SPARKLING CIDER
2 cups pear nectar, chilled
2 cups sparkling apple cider, chilled
2 cups seltzer, chilled
4 ounces (1/2 cup) bourbon whiskey, such as Knob Creek or local Madison bourbon byJ. Henry & Sons
1 Bosc pear, unpeeled, cored, and cut lengthwise into 8 wedges
Directions
1. Stir together pear nectar, cider, seltzer, and whiskey in a pitcher. Divide pear wedges among glasses, and pour in cocktail. Serve immediately.

SPARKLING GRAPEFRUIT SANGRIA
1 bottle riesling
1 bottle prosecco (or a dry champagne)
1 cup grapefruit juice
1/2 cup simple syrup
1/2 cup club soda
1 1/2 cups sliced strawberries
1 grapefruit, cut into chunks/slices
Directions
Place fruit in a large pitcher then combine remaining ingredients and pour on top. Refrigerate an hour or so before serving.
